By now, you’ve probably heard (or, tasted) that Oreo’s latest cookie — a limited edition Caramel Apple flavor — is now available exclusively at Target stores. That didn’t stop our baker-blogger buddy Bakerella (also known as Angie Dudley, Queen of Cake Pops) from getting a sneak preview of the sweet snack before the flavor hit stores, and creating an exclusive cookie pop recipe for us.

They are made with the new, limited edition Caramel Apple Flavored Oreo Cookies at Target. So of course, it only made sense that I had to make them look like little caramel apples, too.
The design for these pops is actually from a fall cake pop treat in my new book — Cake Pops Halloween, available in September. I have a project in there for caramel apple cake pops, and they translate so well that I couldn’t resist making them with Oreo cookies.
These smell like caramel as soon as you open the package. Yum!
Making the pops is really easy. Crumble the cookies, mix with a little cream cheese and form into apple-shaped balls.
Then, all you have to do is dip them in melted green candy wafers. Super cute!
And even cuter double-dipped for the caramel effect.
Sprinkle with chopped nuts or drizzle with chocolate to decorate.

Caramel Apple Oreo Pops by Bakerella
Makes 18 cookie pops
What You’ll Need:
1 package Caramel Apple Oreo Sandwich Cookies, only at Target
4 oz. cream cheese, softened
18 wooden sticks
16 oz. green candy wafers
8 oz. caramel or butterscotch candy wafers
2 oz. chocolate candy wafers
3 microwave-safe bowls
Finely chopped nuts
What You’ll Do:
1. Finely crush 24 cookies in a food processor.
2. In a large bowl, mix crumbs and softened cream cheese. Use the back of a large spoon to incorporate the two together until completely combined.
3. Roll the mixture into 1 1/4 inch balls and place on a wax paper-covered baking sheet. Reshape balls to look like apples by narrowing the base of the ball slightly and making an indention on the top center of the ball. Refrigerate until firm.
4. Melt green candy wafers as directed on the package using a microwave-safe plastic bowl. Insert stick into top of balls and dip in melted green candy coating. Gently tap off any excess and place on a wax paper -covered baking sheet to dry.
5. Melt caramel candy wafers and dip green coated cookie pops into coating so that a small amount of green is still visible on the top. While the coating is still wet, sprinkle on a few chopped nuts. You can also omit the nuts and once the caramel coating is dry, drizzle chocolate on top.
6. Let dry completely and enjoy. Keep refrigerated.
